Apple Raisin Quick Bread
| 1-1/4 | cups vegetable oil | 4 | eggs |
| 4 | teaspoons vanilla extract | 3 | cups all-purpose flour |
| 2-1/2 | cups sugar | 2 | teaspoons ground cinnamon |
| 1-1/2 | teaspoons salt | 1-1/2 | teaspoons baking soda |
| 1 | teaspoon ground cloves | 1/2 | teaspoon baking powder |
| 3 | cups diced peeled apples | 2/3 | cup raisins |
| 1/2 | cup chopped nuts (optional) | | |

In bowl, beat oil, eggs & vanilla. Combine flour, sugar, cinnamon, salt, baking soda, cloves & baking powder; beat into egg mixture. Stir in apples, raisins & nuts. Pour into 2 greased loaf pans. Bake at 325 degrees for 60-70 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes.
