Apple Cobbler

This is a low-fat version of apple cobbler. It is quite good.

4Gravenstein apples, peeled, cored, and cut into 1/4-inch dice1/2cup white flour
1/2cup chopped walnuts1-1/2teaspoons baking powder
2teaspoons cinnamon2/3cups soy milk or skim milk
1/2cup plus 8 teaspoons maple syrup8teaspoons vegetable oil
1cup whole wheat flour1/2teaspoon salt


Preheat oven to 350 degrees and lightly oil an 8x8-inch baking dish. In a medium bowl, toss together apples, walnuts, and cinnamon. Distribute mixture in the pan and drizzle with 8 teaspoons maple syrup. In a medium bowl, whisk together flours and baking powder. In another bowl, whisk together milk, maple syrup, oil, and salt. Add to the flour mixture and stir thoroughly to combine. Spoon the batter evenly over the apples. Bake until the top is golden brown, about 45 minutes. Serves 8.
