Apple Cobbler
This is a low-fat version of apple cobbler. It is quite good.
| 4 | Gravenstein apples, peeled, cored, and cut into 1/4-inch dice | 1/2 | cup white flour |
| 1/2 | cup chopped walnuts | 1-1/2 | teaspoons baking powder |
| 2 | teaspoons cinnamon | 2/3 | cups soy milk or skim milk |
| 1/2 | cup plus 8 teaspoons maple syrup | 8 | teaspoons vegetable oil |
| 1 | cup whole wheat flour | 1/2 | teaspoon salt |

Preheat oven to 350 degrees and lightly oil an 8x8-inch baking dish. In a medium bowl, toss together apples, walnuts, and cinnamon. Distribute mixture in the pan and drizzle with 8 teaspoons maple syrup. In a medium bowl, whisk together flours and baking powder. In another bowl, whisk together milk, maple syrup, oil, and salt. Add to the flour mixture and stir thoroughly to combine. Spoon the batter evenly over the apples. Bake until the top is golden brown, about 45 minutes. Serves 8.
