Apple-Honey Crumble
| 4 to 5 | apples, peeled and sliced | 3/4 | cup canola oil |
| 1/4 | cup honey | 3/4 | cup sugar |
| 2 | tablespoons brown sugar | 1 | cup flour |
| 1/4 | cup orange juice concentrate | 2 | teaspoons baking powder |
| 1 | teaspoon ginger | | Pinch salt |
| 2 | teaspoons cinnamon | 1 | teaspoon vanilla |
| 1/4 | teaspoon nutmeg | 1 | large (or 2 small) eggs |

Preheat oven to 350 degrees. Toss apples, honey, brown sugar, orange juice concentrate and spices. Place the mixture in a 9x13-inch pan and set aside. In a separate bowl, mix the oil, sugar, flour, baking powder, salt, vanilla and eggs to form a thick batter. Drop by spoonfuls into apple mixture. Bake 45 minutes at 350 degrees, or until top is nicely browned. Makes 8 servings.
