Apple Custard Pie

1/2cup sugar1/4cup corn starch
3eggs1/2cup butter, melted
1/2cup corn syrup1teaspoon vanilla extract
2large apples, peeled and thinly sliced1unbaked (9-inch) pie crust


In a bowl, combine sugar & corn starch. Whisk in eggs. Stir in butter, corn syrup & vanilla extract. Fold in half of the apples. Pour into pie crust. Place remaining apples in overlapping circle on top of pie. Bake in 375 degree oven 50 minutes or until center of pie is set. Cool on wire rack. Serves 8.
