Apple Custard Pie
| 1/2 | cup sugar | 1/4 | cup corn starch |
| 3 | eggs | 1/2 | cup butter, melted |
| 1/2 | cup corn syrup | 1 | teaspoon vanilla extract |
| 2 | large apples, peeled and thinly sliced | 1 | unbaked (9-inch) pie crust |

In a bowl, combine sugar & corn starch. Whisk in eggs. Stir in butter, corn syrup & vanilla extract. Fold in half of the apples. Pour into pie crust. Place remaining apples in overlapping circle on top of pie. Bake in 375 degree oven 50 minutes or until center of pie is set. Cool on wire rack. Serves 8.
