Rolled Greens
| 1-1/2 | pounds kale | 1 | teaspoon olive oil |
| 1 | bacon slice, finely diced | 4 | cups chopped onion |
| 1/4 | teaspoon EACH salt & pepper | 1/4 | teaspoon hot pepper sauce |

Remove stems. Wash & pat dry. Stack 4 leaves together & roll up holding tightly. Slice thinly to equal 16 cups. Heat oil in Dutch oven until hot. Add bacon; saute 2 mins. Add onion; saute 2 mins. Add kale in batches; cook 1 min after each addition, stir often. Cook another 25 mins or until tender, stir often. Add salt, pepper & sauce; cook 2 mins. Serves 8,
