Steamed Vegetable Medley

4medium carrots, scrubbed and cut into 1-1/2-inch sticks
10ounces green beans, trimmed (1 bag is 1 pound)
1small onion, slivered
1red pepper, stemmed, seeded, and slivered
Salt
Pepper
Lemon juice from 1/2 lemon


Place carrots, beans, and onion in steamer set over boiling water. Steam, tightly covered, until not quite tender (5 to 6 minutes). Place in a serving dish. Add peppers and toss. Squeeze the lemon juice over the vegetables and serve.
